Only 3% of all wines are made to age. Red wine
is best consumed within 5 years. White wines should be consumed within
2 years.
After 2 years a white will start to darken and in 20
years a red will be clear. All grape juice is white. The collar comes
from the tannins
in the skin. The head space in a bottle has 2
purposes; one it allows the cork to enter because liquids will not
compress. The other
allows sulfites to leach out of the wine filling the
head space to mix with oxygen and inhibiting oxidation. Dry wines are
not sugar free
wines. Alcohol is a form of sugar. When
"room temperature" was established for wine it was long ago
when room temperature was
